Give them a wide berth until you're leveled up. Level up by playing side-quests and clearing locations. When you're within 1-2 levels of them, ambush and kill them. Im not aware of such an option in Origins. Imho the best you can do is upgrade your Hidden Blade and perhaps disable level scaling (called Enemy Auto-Level, which is disabled by default except in New Game Plus).
